Role of Pectin in Jams and Jellies
Pectin is said to be the important component which aids in the setting of jellies and jams. The fruit when cooked releases the pectin into liquid and when the solution is cooled down the molecules of pectin combine together to form a mesh and sets the jams and jellies. Fruits like strawberries contain less pectin that they need to be mixed with other fruits rich in pectin or should be made as concentrates to get the right consistency.
