Honing

After using a Wusthof honing steel, you do not need to use it that often.  They are available with different handle designs and in a variety of sizes based on the knives that you will be sharpening.  '''Honing Tips: ''' * Never use a honing steel that is shorter than the knife you are sharpening.  * Don't stroke each side of the knife more than once in succession. * Use the "Tip Down" method which lets you see the point at which the knife and steel make contact.  It is done by holding the steel in your left hand and the knife with your right hand (or the other way around for lefties).  Move the knife swiftly in an arching motion at a 20 degree angle. 

Sharpening

sharpen your knife with the following available tools from Wusthof. *diamond surface, your knife will be sharpened very quickly while using the "Tip Down" method. *electric and has wheels that give you the right angle to get your knife the best sharpened edge.  To use, simply pull your knife through the wheels. *grits. The smaller the value of the grits, the more coarse the stone will be.
