Wusthof Cleavers
A household name when it comes to knives, Wusthof is a German knife maker based in Solingen, Germany, that has been designing and creating
knives, as well as
precision forged from a single piece of high carbon or no stain steel. Wusthof makes a specific type of knife called a cleaver, which resembles a hatchet and is made for chopping vegetables and meats. Very popular in Chinese cooking, the cleaver has worked its way into western cooking as well, because it cannot be beat when it comes to cutting through certain ingredients.
Cleaver Uses
Think about a
cleaver as you would a little
axe or
hatchet for your kitchen. Cleavers were originally conceived as an ideal
cutting through bones. However, they can also be used for
vegetables or even
herbs.
* A cleaver relies on its weight to cut through meat and bones. In other words, it gets through large bones or tough vegetables because of its impact. Although a cleaver need not be particularly sharp,
Wusthof cleavers do tend to be fairly sharp.
* A cleaver is also useful as a spatula. After cutting up a meat or vegetable, one need only run it along the surface of the cutting board before depositing the cut items into a
frying pan or
wok.

Types of Cleavers
Although Wusthof cleavers have the same shape and are made of the same material, they do vary in size and weight, so it is important to consider what you are going to be primarily using your cleaver to cut or chop.
* If you're chopping vegetables such as
garlic,
onions or
ginger, you do not necessarily need a large or
Wusthof 7 inch cleaver.
* If, however, you are going to be chopping large pieces of meat with bone, you will want to consider a
Wusthof 9 inch cleaver.
