Louisiana has quite a bit of unique history, some of which has ended up in its cuisine. Creole or Cajun meals typically have a lot of flavor and a lot of spice. Personalized Cajun Seasoning
If you'd like to try out making your own blend of Cajun seasoning to accommodate your tastes, your starting mix should resemble the following combination, (though you can make adjustments as you wish): toss together 3/4 cup fine grain sea salt, 1/4 cup ground cayenne pepper, 2 tablespoons of ground white pepper, ground black pepper, paprika, onion powder, and garlic powder. Again, add more paprika or garlic powder as you see fit. It is important that you use good quality cayenne pepper to truly get the most out of your Cajun seasoning. The pepper is what adds that signature kick to the meal that so many find so irresistible. You can simply toss clean cuts of Grouper or some other light white fish in cajun seasoning and spritz with some lemon juice for a satisfying, low calorie meal.
