Truffles are a very pungent fungi, which is a fancy word for a fancy mushroom, that has been beyond coveted over the years as a true luxury food and flavor. The black truffle comes most predominantly from France and it is also known as the Périgord truffle. The reason that they're as sought after as Daniel Day Lewis is, is because their production occurs in so specific a region, at such small amounts, for a very short season. Where to Use Them
Some of the finest chefs use black truffles and black truffle oil to add that essential, somewhat odd taste to their terrines, patés, and sauces. Truffle oil, butter, and some shavings of artisan parmesan cheese can deliver a simple, yet absurdly delicious meal. Chefs have also experimented with flavoring egg dishes with the taste of truffles, as well as grain dishes like polentas and risottos. Finally, you can decadently use the whole, or cut portions, of the truffle itself as decoration on meats and fish. Before you purchase though, it is a good warning to heed that the taste of truffles is not for everyone. Try the taste on before you invest, because these guys tend to be pricey.
