Although conventional wisdom is that red wine is served at room temperature, the room to which this refers is in a drafty building in the centuries before climate-controlled homes. Generally speaking, this archetypal room was not as cold as your refrigerator. Wines, even white wines, should not be stored in the fridge; they should only be in the refrigerator for 40 minutes (reds) or an hour or two (whites) until they reach the optimal serving temperature. Generally, Red wines should be served between 60 and 65 degrees and white wines should be served between 50 and 55 degrees.
