The ritual of slowly pouring ice water over a sugar cube on an absinthe spoon and have it dissolve into your drink, also known as "louching," has been performed for centuries. * The traditional French absinthe serving ritual is as follows: ** Pour three ounces of absinthe into your perforated spoon on top of the glass. On the spoon you place your sugar cube, then pour ice water very slowly onto the sugar cube until the drink is 2 to 5 parts water. Then stir the drink and enjoy. * The Czech absinthe ritual adds a little flair to the routine: ** Pour a shot of absinthe into a spoon alight. Wait for the flame to die down and then stir it into the alcohol. Add water to put out the flame. Be careful with this one, or you're liable to get burned!
