Processing
Thanks to the roasting processes, the longer the beans have been roasted, the oilier they are. Oil is the true mark of a good dark roast coffee: full of flavors taken on by the roasting process, not unlike whiskey. As such, dark roasts are best purchased as whole beans, so you can detect the oiliness for yourself. If you find that your beans are dry, but very dark, you've been sold burnt coffee beans. While a certain charcoal flavor is desirable, you don't want crispy tasting coffee.
Roast Varieties
If you find you're having trouble when looking for dark roast coffee, you may need to be more specific. There are a few dark roasts with different subtleties in flavor and color.
* Medium or City Roast coffee is a dark brown bean that still has elements of its growing and processing in its flavor. It tends to be sweet and a little complex as a result.
* Full Roast or Italian Roast coffee beans are slightly shiny and have a note of lightly burnt flavor. Often used for espresso, this roast has a heavier body and a very strong aroma.
* Double Roasted or French Roast coffee is very dark and intense and strangely sweet thanks to caramelization. The beans should be very oily. These beans are sometimes called Spanish Roast or even Italian Roast, depending on one's locale. This is the darkest roast available.
