Stinking Bishop
Stinking Bishop is a vegetarian cheese similar to munster that comes from England, Gloucestershire and is said to be derived from a cheese once made by Cistercian monks in the village of Dymock. Monks have always been associated with the production of 'washed rind' cheeses. These are cheeses washed in a variety of liquids (perry). In the case of Stinking Bishop, the perry is an alcoholic drink made with a local variety pear called "Stinking Bishop" -- hence it's name, Stinking Bishop Cheese.
