The hardiest artichoke variety, to zone 6. produces big flavorful 3-5" flower buds (the part that is eaten) the first year from seed, so it can be grown as an annual in cold regions. To get artichokes the first year, start indoors in a warm place, then harden off and transplant outside while weather is still cold so it thinks it's been through the winter. One of the best ornamental edibles with huge silver spiky leaves. Give the crown protection from cold...

More often than not, it is necessary to amend the soil to achieve optimum pH balances, as well as the proper levels of nitrogen, phosphorus and potash. Testing your soil is ideal; however, at a bare minimum, before planting...

CULTURE: Artichokes and cardoon appreciate conditions that foster rapid growth. Start indoors in late January or early February; sow seeds 1/4 inch deep in 4 inch pots filled with sterile seedling mix. When the soil temperature is maintained between 65-75°F, emergence occurs in 10-20 days. Sow heavily and expect 70% germination. Of these seedlings, about 20% will not produce high quality plants. Cull out the small and albino plants. Fertilize transplants with a good all purpose liquid fertilizer...

I live in Zone 5 and have successfully grown them and harvested big 'chokes the first year by setting them out in the "iffy" weeks prior to danger of frost passing (50-70 degree days and 30-40 degree nights). If it freezes, I bring them in, if it gets too warm, I put in shade. More work, yes, but worth it, because this is the best variety of artichoke of the five that I have grown. I only grow artichokes as an annual and this one outproduces Imperial Star for me when grown as described above....

Artichokes are a delicious vegetable from the thistle family that can be grown as a perennial in mild areas and an annual where the ground freezes. Covering with mulch will help them to over-winter in moderate climates. Artichoke plants are very large, growing several feet tall. The hearts are delicious and have many culinary uses and the leaves are also good for food. The plant also can be used ornamentally, often grown in borders.
