Description : Using only indigenous, naturally occurring yeasts for fermentation, the wine is then aged in traditional large oak barrels. 50% Corvina, 30% Rondinella 5% Molinara and 5% local grapes such as Forselina, Rossara, Pelara and Negrara are vinified separately then blended before being passed over Amarone gross lees to promote further alcoholic fermentation. The wine is aged for one year in steel and two in Slavonian oak casks.

Though Valpolicella Classico Superiore can be drink throughout the meal, it will go best with more involved entrees, for example roasts or stews.
