Tasting Notes: We harvested our Semillon grapes on September 17th, dried them on prune trays in the vineyard for seven days and crushed them at forty percent sugar. Fruit for this uniquely regional style of wine is hand-harvested, chilled and pressed prior to fermentation in stainless steel tanks to preserve the fresh, aromatic fruit characters inherent to Hunter Semillon. On release, it is a luminous green/yellow colour, the nose offering lifted zesty, lemongrass aromas with some sweet apple blossom notes. The citrus dominated palate shows lime and cut grass flavors with typical tight structure, low alcohol and nervy acidity running the length of the wine.
