Still one of most interesting non-Champagne bubblies we have come across in the last couple of years, this blend of 70% Pinot Noir and 30% Chardonnay has all of the attributes of the ‘real thing’. Made in the Methode Champenoise and disgorged after about two years in the bottle, this wine has all the creamy density and vibrant fizz of Champagne as well as a ripe core of green apple fruit, flowers, citrus, fine bead and creamy mousse. This Burgundy guy has a nice touch with bubbles.
