The Sauvignon blanc is processed using two different methods. To preserve the delicate tropical fruit flavors, a portion of the fruit goes directly into the press as whole clusters. The remaining fruit is de-stemmed and left in contact with the skins for several hours before pressing, enhancing the grapefruit/citrus components. All of the juice is fermented cold (55 degrees F) in stainless steel tanks.

Description Winemaker Notes - The 2008 vintage is a bit richer and denser than past vintages. Enticing aromas of green melon, wet stones, cantaloupe, cut grass and vanilla bean are followed on the palate with flavors of guava, rose petal, gooseberry and vanilla. The 7% Semillon fleshes out the mid palate and adds a nice layer to the finish.

Great stuff just has a way of elbowing it's way ahead of the competition. I sure hope other Sauvignon Blanc producers that have been waiting their turn patiently don't see this page. Bravante's 08 SB crashed the party late and stole the show for SB's under 20. Nicely delivered, Bravante SB is a terrific all-around white that begs for a Nicoise Salad or a crabcake with garlic aioli.

Stylistically, the Bounty Hunter winemaking Team, led by Tim Milos, aimed to make a fresh, high acid white with minimal oak. An ultra-clean palate weight showcases its nuances of grapefruit, kiwi and citrus zest. The sophisticated mineral notes that support the fruit aren't often found in wines of this price category. Producer notes: "75% Sauvignon Blanc, 25% Sémillon. This enticing Sauvignon Blanc offers a beautiful combination of freshness and complexity. Remarkably, the 2008 Eloge may be as compelling. Composed of 55% Cabernet Sauvignon, 25% Cabernet Franc and the rest Petit Verdot and Merlot, it exhibits a dense opaque purple color followed by aromas of espresso roast, cassis, blueberries, licorice and lead pencil shavings. Winemaker Notes: After early morning harvests, the grapes are gently pressed into stainless steel tanks. Our winemakers Marco DiGiulio and Zach Long inoculate the juice with a specially-selected yeast culture, designed expressly for Sauvignon Blanc fermentation; the yeast was created to highlight the unique characteristics of the varietal. After fermentation, the wine ages for 6 months in stainless steel without malolactic fermentation.
