Black Beauty Eggplant Seeds
Heat oil in a saucepan over medium heat, cook the garlic and onion until soft, about 3 minutes. Add eggplant and tomato, cook for 5 minutes. Stir in tomato paste, oregano, parsley, tomato juice and chicken stock, bring to boil then lower heat and simmer for 15 minutes. Season with salt and pepper to taste.
