Water soluble vitamins are used because larger birds often tend to dip their food in their water prior to eating. If this occurs, some of the vitamins will actually soak off the food and fortify the water as well. The food coloring is used because most birds seem to be attracted to brightly colored objects and we want to ensure that they will be interested in the vitamin coated pieces. The orange extract also seems to help attract the birds to the vitaminized morsels.
