Not just for sausages! Wusthof, being a German company, calls this a "sausage knife." Here in North America Wusthof prefers to call it a "serrated utility knife", since it falls in the larger-than-paring but smaller-than-cook's knife range which is generically called a "utility" size. Me? Living in Montreal (the bagel capitol of the world), I like to call it the Ultimate Bagel Knife -- you should see how this baby neatly and easily slices a bagel! I really like this somewhat unusual knife. I think...

Wusthof 3-Inch Classic Serrated Paring Knife
Wusthof's Classic Line of forged German Knives is the benchmark for craftsmanship, usability, design and function among knife companies. Full-tang and full-forged construction lend to their remarkable balance and control. The hand-honed edges offer the right balance between sharpness and durability. Not so acute that they need to be re-sharpened after every use, yet not so obtuse that they can't cut paper, at 22 degrees these knives are razor sharp yet beveled enough to hold a lasting edge. The triple-riveted...

Traditional serrated bread knife. Same model that is included in the standard knife sets. A fine bread knife, but if you're buying it separately, I'd suggest spending a few extra dollars to get the extra length of the 9-inch model (4165).

Also called a "bird's beak" paring knifel, versus the "spear point" model 4040-9 paring knife below. Some people prefer the straight edge on this type to the curved edge of the spear point. I'm a spear-point guy myself, but really, either will do the trick.

Traditional serrated bread knife, but in a more useful 9-inch length. Same model that is included in the standard knife sets, but an inch longer. The traditional pointy tips on the serrations (unlike the reverse scallops on the offset serrated and Super Slicer models) cut a bit more aggressively -- which is probably good for really crust breads for example since you get a bit more "bite" from all those sharp tips. A truly excellent high performance and heavy-duty bread knife.

Reverse scallops on the edge allow this beautifully-made thin bladed knife to cut aggressively. Perfect for use as a small bread knife, deli/sausage knife, or for slicing nearly anything in the kitchen. Yes, I like Tony Bourdain too. I loved Kitchen Confidential (of course!), and his FoodTV shows are great fun too. And if you've read Kitchen Confidential you'll remember his high praise for this style of knife. Here's the quote: "A genuinely useful blade, however, and one that is increasingly popular...
