Many different strains of wheat exist with main classifications being "hard" used to make bread and "soft" from more humid climates used for cakes cookies and pastries. In addition Durum wheat is grown to make semolina flour which makes pasta. Wheat is higher in protein content than almost all other cereals containing over 70% carbohydrates and 12% protein. A pound of wheat contains about 1,500 calories.
