January 03, 2006: I can see why people like this book because it has a huge variety of recipes. However, I really wanted a tofu cookbook that would teach me how to SUBSTITUTE tofu in my cooking. 'The Giant Book of Tofu Cooking' gives recipes in which tofu has been ADDED. For example, the 'tofu cheesecake' still has a fair amount of cream cheese in the recipe. Rest assured that all of the recipes are vegetarian, and one COULD just substitute soy products for the dairy, but for me...
