This wine delighted all the senses that wines can address. Clear, light yellow color. The nose so delighted me that I wanted to keep breathing over the glass and was hesitant to switch to taste. Thankfully, I sipped and enjoyed the clean, fresh feel on the palate; the pleasantly tart sensation; and the continuing pleasant aroma as I breathed in again before swallowing. This may be the best sauvignon blanc I have ever enjoyed at this reasonable price.

A very cool/damp Spring got the vines off to a relatively slow start on their path to maturity. There were some occasional heat spikes which accelerated some of the maturation and caused alarm for the possibility of sunburn. The weather cooled and Fall turned out to be beautiful! HandleyÂ’s Dry Valley vineyards are perfectly suited for Sauvignon Blanc. The warmer climate gives these wines a ripe, full-bodied character. Two thirds of HandleyÂ’s Sauvignon Blanc was fermented and aged in French oak barrels giving the wine a round and full texture; the remainder remained in stainless steel tanks, to bring out the fruit and mineral qualities of the wine.

Combine finely chopped bittersweet chocolate and heavy whipping cream in heavy medium saucepan. Whisk over low heat until chocolate is melted and smooth. Remove saucepan from heat. Whisk egg yolks, egg, sugar, flour, ground black pepper, salt and cinnamon in medium bowl to blend. Very gradually whisk chocolate mixture into egg mixture until smooth and blended. After picking, the grapes were pressed as quickly as possible and the juice was chilled and settled for two days. After decanting the clearest juice, we added Champagne yeast and kept the fermentation temperatures below 60 degrees. By fermenting and aging this 100 percent Sauvignon Blanc in small stainless-steel tanks, we highlighted its racy aromas of grapefruit zest, lemon/lime and pineapple.
