Purple Tree Spinach (Chenopodium giganteum) Annual. Young shoots from this variety are covered with a fine iridescent magenta powder. The young leaves and shoots are sweet and tender. They can be harvested and used in salads. Trim the plant regularly to keep it manageable. Otherwise, this plant will reach more than 7 feet. Young seedlings already show the nice magenta coloring. Birds love the seeds in the fall.
