For the non-vintage Rosé Sec, Pol Clement’s vintners put together a proprietary blend of Gamay, Grolleau, Cabernet Franc and Pinot d’Aunis. The finished wine is a lovely salmon-pink in hue, has a delicate aroma, and projects plenty of nose-tickling bubbles. But most important of all, it’s absolutely delicious, offering abundant red berry and cherry flavor. (And if you accidentally call it Champagne, we won’t tell.)

Tom Rodriguez was convinced that Virginia apples could produce sparkling apple ciders as fruity and complex as the ones he had enjoyed in Normandy and Brittany. After retirement from an international champagne, wine and spirits house, he designed a business to market the effervescent apple cider he remembered.
