This is Paula Wolfert's latest book. It is magnificent! It discusses cooking with clay pots of all types and provides recipes, mostly brand new, from Morocco, Spain, Greece, Italy and France. She suggests specific pots for each and substitutions for tough to find ingredients. The one pot you're really going to want to have for many of these is a stovetop cazuela.
