Cabernets can be mellow and mild, hearty and rich. It has a deep red color, with the primary taste being black currant. Other overtones can include blackberry and mint. Traditionally aged in oak, the wine also takes on an oaky, vanilla flavor. Higher quality cabs age extremely well (although a bit slowly), developing a sprinkling of five or six tastes within it.

The growing season saw these grapes harvested at optimum ripeness during September and into October with an average of 24.5 brix. Picking took place in the early morning to keep the fruit as cool as possible. Upon arrival at the winery the grapes for this wine were de-stemmed, but not crushed, leaving over 90% whole berries. The nose swirled around from blackberry to lemon to a musty-oak. The palate features strong tannins with blackberry and vanilla notes accompanied by spicy and vanilla flavors. As the bottle opens, the layers really come out. The beginning of the palate is blackberry and currant. Then, a spicy note to finish surprised me: it was was like a combination of a creamy nutmeg and black pepper. Delicious, cheers!
