This organic Limburger from the Zurwies / Allgäu Coop is made by Anton Holzinger who uses fresh, silo free cows milk from local farms. It is ripened for 3 4 weeks during which time it is smeared daily with a b. linens mixture. This treatment gives the cheese its characteristic peach coloring and full aroma. Despite being washed as it ages, this Limburger often develops a thin bloomy crust which gives it a mellow flavor and a beautifully creamy texture with flavors of hay and mushrooms.

Limburger
No conversation of stinky cheese is complete without discussion of the virtues of Limburger. Perhaps the most famous of them all because people either really love it or really hate it. Not for the timid, it develops an extremely pungent odor as it ripens. This is the stuff Grandma used to make Grandpa eat outside! If you love Limburger, we have some good news for you… it seems to get delivered faster than any other cheese we send!
