THE SURFACE MATERIAL OF THIS PAN IS UNKNOWN TO ME. IT IS NOT DIFFICULT TO CLEAN AFTER SOAKING IN WARM SOAPY WATER. THE FIRST TIME I USED IT I SCRAMBLED EGGS. THEY STUCK TO THE SURFACE AND I WAS DISAPPOINTED. THEN I TRIED HAMBURGERS AND THEY WERE GREAT. STILL LEFT SOME RESIDUE EVEN AFTER SOAKING. FEEL LIKE I NEED MORE INFO. RE THIS EXPENSIVE PAN. I HAVE WANTED THIS BRAND FOR A LONG TIME. I'M BAFFLED.I DO LIKE THE EVENLY DISTRIBUTED HEAT.ALSO, THIS PAN RETAINS THE CORRECT TEMP.

I bought this for my wife who has missed cooking with cast iron since she bought a glass top stove....all of our older cast iron skillets do not have a flat bottom so they will not work.....but this skillet does the job !!....very easy to clean and performs the same as cast iron.....even cooking is easily done with this skillet.......very good on a glass top stove.......although not cheap it is worth every penny......my wife liked it so much I had to order the bigger size as well for her !!!
