White Tea is minimally processed - generally only air-dried. The highest quality white teas are picked before the leaf buds have opened, while still covered with silky white hairs. Of all teas, whites have the least amount of caffeine. These teas should be steeped in water well below boiling.

This jasmine "Yinzhen" tea leaf has very long silvery, downy tips. Most of the flowers have been removed. It has a wonderful bouquet which shows repeated scenting, and produces a liquor that is truly delicious. Use spring water at a temperature of 80° to 90° C. (180° to 195° F.) and multiple short steepings.

Production consists of only tender new buds, just after the buds sprout but before they actually open. Silvery and downy, these leaves are plucked at peak perfection. Silvery in color because they have very little chlorophyll and because they are virtually unprocessed. Fresh jasmine flowers are placed on top of the newly picked leaves and refreshed up 8-10 times, until the scent infuses into the tender leaf and actually becomes part of the leaf.
