Uby's Sauvignon Blanc vineyards are planted in a distinctive mix of alluvium and tawny sands. This mixture of well-drained soils produces a refreshing and zesty Sauvignon Blanc. Harvest took place at night to preserve the grapes’ aromas and flavors from the oxidizing effects of the hot summer sun. The juice was then macerated with the skins and fermented at a low temperature to preserve the fresh flavors.
