Mechanical engine temperature gauges use fixed length tubing (usually filled with ether) to transfer the oil/water temperature from the fitting to the gauge. Unlike with pressure gauges, this length can not be changed by adding more tubing, so make sure you order a gauge which comes with the proper length tubing.
