We love when we're able to trace the cheese to the person. The person, in this case, is Oscar, from Leon in Spain. He produces Leonora in small batches, each one distinct and unique. Leonora is shaped like a flat brick, with natural mold rind. Inside its white paste is creamy, very aromatic and with a tart finish.
