Our 2006 vintage is 100% single-vineyard Atlas Peak Cabernet Sauvignon and a mere 192 cases were produced. On the nose you’ll discover blackberry, currant, cocoa, anise, sage and mint; the full-bodied palate is rife with youthful tannins that fall into line with the fruit and acidity after considerable decanting. Definitely a wine for the cellar, but if you can’t wait, please allow several hours of decanting time.

The fruit for this wine was sourced from vineyards on Atlas Peak, Mt. Veeder, Howell Mountain and Spring Mountain District. Grapes were harvested by hand between September 24th and October 21st, 2004. The 2004 vintage was slow to start, as it usually is in the higher elevation appellations. This 2004 Mount Veeder Cabernet Sauvignon is driven by its firm acidity due to the coolness of the elevation. This wine exhibits good structure, shows rich purple color and has briary, brambly flavors of wild blackberries, as well as hints of spice, pepper and herbs like lavender, anise and sage. This 2004 Mount Veeder Cabernet Sauvignon matches wonderfully with a coffee and pepper rubbed rib roast served with au gratin potatoes.

Black/Dark red color. Ethereally structured, almost concave nose that draws you down into the glass (I find this type of nose often on high-altitude, highly structured reds). Dusty mocha, vibrant cassis, and ripe blackberry on the nose with a chewy midpalate of rich blackberry/blueberry fruit, plush mouthfeel and bold tannins in a finish of dark chocolate and cassis. This 2003 Spring Mountain Cabernet Sauvignon shows deep red purple color, lots of soft tannins, wrapped in intensely rich red stone fruit.

Cabernets can be mellow and mild, hearty and rich. It has a deep red color, with the primary taste being black currant. Other overtones can include blackberry and mint. Traditionally aged in oak, the wine also takes on an oaky, vanilla flavor. Higher quality cabs age extremely well (although a bit slowly), developing a sprinkling of five or six tastes within it.
