Chalk Hill Sauvignon Blanc 2006
This was an absolute hit at dinner tonight. I had been having enormous success with Sauvignon Blancs from the Russian River Valley, and decided to push my luck. This wine did NOT disappoint. The pleasant grapefruit orchard scent, sweet peach attack, and long, dry, and euphoric finish made for a great night at the table. Excellent with all courses: Lemon-Onion Chicken Salad Tatar, Goat Cheese Salad, and Scottish Salmon with Pesto. Cheers!

This S.B. is fermented entirely in a stainless tank. This is common, but Deerfield is never common. We find ways to accentuate the uniqueness of the vineyard. We started the fermentation on native yeast, cooled the wine until the fermentation slowed to a snails pace and after a couple of weeks introduced a pure strain yeast. The result is more mouth feel and greater complexity.
